Ifisashi is a term used to describe a dish that is prepared with groundnuts in Zambia. Most of Zambian cuisine especially vegetables can be cooked as ifisashi but the common ones are chibwabwa (pumpkin leaves) , and katapa (cassava leaves). In this recipe, the ifisashi dish we are making use of fresh chibwabwa (pumpkin leaves).
Ingredients
3 bundles of Chibwabwa
1 medium tomato
4-5 tablespoons of pounded groundnuts (sieved)
1/4 teaspoon of soda (optional)
Salt to taste
Instructions
- Remove the outer fibre from the stalk and the center of the leaves (leaf by leaf)
- Wash thoroughly leaf by leaf as it may carry soil
- Cut the Chibwabwa
- Add a bit of water in a pot and add the cibwabwa after letting the water boil a little
- Cover the pot and let it boil for about 5 minutes
- Add some tomatoes , groundnuts and salt
- Cover again for about 5 minutes
- Add 1/4 teaspoon of soda (optional)
- Mix well and stir till the tomatoes and groundnuts are well cooked
- Cover the pot
- Simmer for about 2-3 minutes
- Ready to serve
- Serve with nshima
Cooking tip
Adding a bit of soda makes the Chibwabwa taste great but can take away some nutrients.
