How to Cook Okra with Soda-Zambian Food

Okra is a very nutritious vegetable. The most common way to prepare it in Zambia though involves the use of “soda” . It makes the okra have a unique taste and adds to its colour but it reduces the nutrients. The healthy way of cooking recommended is by frying, grilling or roasting. If you do not mind  losing some of the nutrients, here is a recipe of how to cook okra with soda.

Okra with soda

You will need;


A packet okra (25 individual okras)

1 large tomato

½ teaspoon of soda

Some water

Some salt to taste

How to cook okra with soda


  1. Wash the okra
  2. Remove the stems and the bottoms of the okra
  3. Dice the okra
  4. Put water in a pot with the ½ teaspoon of soda and leave to boil. The water should be about the same level as the okra or slightly less
  5. Add the okra, diced tomato and add together with salt
  6. Leave to boil while stirring continuously
  7. Stir for about 15- 20 minutes
  8. When the tomato is cooked, the okra is ready to serve


Cooking tip

When okra starts to boil, it tends to overflow. Do not leave the pot unattended to. Stir continuously until it is ready.
