How to make Zambian Fritters Vitumbuwa

Zambian Fritters also known as Vitumbuwa are a delicious snack. They are usually eaten for breakfast and served with either a hot or cold beverage. You can also have them as snacks at any time of the day. They are made from wheat flour. You can use either baking powder or yeast.  They are usually sold as street food but they are now being made and sold in bakeries.

In this recipe, we are going to learn how to make  Zambian Fritters -Vitumbuwa with both yeast and baking powder.

How to Make  Zambian Fritters-Vitumbuwa with yeast.

Zambian fritters

You will need;

2 cups of flour

2 tablespoons sugar or more

Half a sachet of instant dry yeast approx. 1 teaspoon

2 eggs

250 mls Milk

Cooking oil for deep frying

 

Instructions

  1. Put two cups of flour in a bowl
  2. Add four tablespoons of sugar (or more depending on how sweet you want them to be)
  1. Add a quarter of a teaspoon salt
  2. Add half a sachet of dry yeast.
  3. Mix two eggs with 250mls of milk and add to the mixture. Mix well and cover with a tea towel.
  4. Put the bowl in a warm place, and when the dough rises to twice its size.
  5. Deep fry in hot oil till they brown and are well done inside as well
  6. Ready to serve

How to Make Vitumbuwa using Baking Powder

Ingredients

You will need:

2 cups of flour

½ cup of Sugar

1 ½ cups of water/milk

2 eggs

2 teaspoons baking powder

1 teaspoon salt

Cooking oil

Instructions

  1. Put all the dry ingredients together and mix well
  2. Beat the 2 eggs and add them in .
  3. Mix thoroughly
  4. Start adding in some water/ milk slowly and stirring, mixing all the ingredients well
  5. Stir until the mixture is smooth
  6. You can use a pan or pot to fry. You need to add a lot of cooking oil for deep frying
  7. Add the oil in a pan and let it heat
  8. Start adding the mixture using a spoon making sure they are separated from each other
  9. Make sure they brown from both sides and are also cooked on the inside. This can take about 5 minutes for each piece
  10. Drain out the cooking oil as you remove them and let them cool a little
  11. Ready to serve
