How to Make Zambian Nshima and Meatballs

Step 1: Prepare the Nshima

Bring 4 cups of water to a boil. Mix 1 cup of maize meal with cold water to make a smooth paste. Pour into boiling water while stirring continuously. Gradually add the remaining maize meal, stirring until thick. Reduce heat and cook for 10–15 minutes, stirring until smooth and firm. Shape and keep warm.

Step 2: Prepare the Meatballs

In a bowl, mix minced beef with chopped onion, salt, curry powder, and black pepper. Shape into small meatballs.
