Beans leaves commonly known as Chimpapila in Zambian local language (Bemba) is a very delicious and nutritious vegetable. It has a slightly tougher consistency than most Zambian vegetables and it tastes a bit tangy. Today, we are going to learn how to cook Chimpapila with groundnuts.
A little soda is added to the mix to make it tastier even though this may result in the loss of some of its nutritional benefits.

How to cook Chimpapila with groundnuts
You will need;
Ingredients
Chimpapila (Bean leaves)
1/3 cup raw dry pounded groundnuts
1 medium tomato
1 medium onion
¼ teaspoon bicarbonate of soda
A cup of water
Some salt to taste
Instructions
- Remove the stalks from the leaves
 - Wash the Chimpapila
 - Add a cup of water in a pot
 - Throw in the vegetables and add some chopped tomatoes
 - Cook for about 30 minutes while stirring
 - When the Chimpapila is tender, add ¼ a teaspoon of soda
 - Add your powdered groundnuts and some salt to taste
 - Stir occasionally for some 30 minutes more while it cooks
 - Lastly, chop some onions and add to the vegetables
 - Simmer for some 5 minutes
 - Serve with some nshima and any protein dish
