Here is a simple recipe on how to cook dry fish stew Zambian style.
How to cook dry fish stew
Ingredients
Dry fish
1 lemon
Chopped tomatoes
Chopped Onions
Bell peppers
Salt
Some curry powder and paprika(optional)
Cooking oil
Method
Cut the lemon in half and rub the fish to clean
Rinse the fish in warm water
Make some gravy in a pot by frying the tomatoes, onions and bell peppers
Add some salt,curry and paprika
Add in the dry fish
Add 1/4 cup of warm water and leave to cook
Keep adding a bit of warm water until the fish is cooked. This might take about an hour
When the fish is ready, it makes a nice thick gravy
Serve with Nshima and Vegetables
